The Fifth Quarter
The name “Fifth Quarter” has its origins in traditional butchery. While an animal was traditionally divided into four main quarters, “The Fifth Quarter” referred to everything beyond this classification: tongue, sweetbreads, heart and other prized cuts. They have always been regarded as an expression of true craftsmanship, not only in their preparation, but above all in the respect, care and appreciation afforded to them, equal to that of the most celebrated cuts.
